EGGPLANT CASSEROLE 
2 eggplants, peeled and cut up
1 onion, diced
Saltine crackers
1 lb. cheese
1 egg

Cook eggplant and onion until done. Pour off water. Add egg and 1/2 cheese and crackers enough to hold together. Add 1/2 pound cheese, grated cheese on top until brown or cheese melts. 25 minutes, 325 degrees.
