TURTLE LOAF WITH BROWN GRAVY 
Put 3 pounds turtle meat through food grinder and mix in:

1 tsp. salt
1 lg. onion, chopped
2 c. bread crumbs
1 tbsp. Worcestershire sauce
1/2 tsp. pepper
2 eggs
1 1/3 c. milk

Form into a loaf and bake 35 minutes in moderate oven. For brown gravy saute:

1 tbsp. chopped onion in 2 tbsp. bacon drippings
Blend in 2 tbsp. flour
3/4 c. hot water in which one bouillon cube has been dissolved
1/4 c. red wine
