PEPPER STEAK 
1 flank steak
1/4 c. onion
1 tbsp. oil
1 garlic clove
1 tsp. salt
Dash pepper
1 bouillon cube
1 c. hot water
1 can tomatoes
1 tbsp. cornstarch
1/4 c. cold water
2 tbsp. soy sauce
1 lg. pepper

Brown meat slowly in hot fat. Add onion and garlic last few minutes. Season with salt and pepper. Dissolve bouillon cube in hot water and add to meat. Cover and simmer until almost tender 20-25 minutes. Add tomatoes and cook for 40 minutes longer. Add pepper, combine cornstarch, soy sauce and water. Stir into meat and bring to a boil, stirring for 5 minutes longer. Serve over rice or noodles. (Serves 4 people).
