A LITTLE BIT OF EVERYTHING
BREAKFAST
 
5 tbsp. butter
2 c. thinly sliced peeled potatoes
1 green pepper, seeded and chopped
1 sm. onion, chopped
Salt
5 strips cooked bacon, crumbled, or 1 c. chopped ham
1 (2 oz.) can sliced mushrooms, drained (optional)
4 to 5 eggs
3/4 c. shredded Cheddar cheese
Freshly ground pepper

Melt butter in large, non-stick skillet over medium heat. Add potatoes, green pepper and onion and salt. Saute until potatoes are tender and golden, about 10 minutes. Stir in bacon or ham and mushrooms. Break eggs into skillet and scramble with mixture.

When eggs begin to form, sprinkle cheese on top. Cover and continue cooking until cheese melts. Season with salt and freshly ground peppers. Serve immediately.
