BAGELS 
1/4 c. butter
1 1/2 tsp. sugar
1/2 tsp. salt
1 c. scalded milk
1 pkg. dry yeast
1 beaten egg white
3 1/2 c. flour

Mix butter, sugar and salt in bowl. Pour over hot milk. Let stand until lukewarm. Sprinkle on yeast and let stand. Stir in egg white and flour. Knead and raise in bowl.

Divide into 4 parts then into 6 pieces.

Boil 2 quarts water, 1 tablespoon salt. Boil 1/2 minute on each side. Place on greased pan. Brush with egg yolk. Bake at 400 degrees for 15 minutes.
