LUAU PORK 
1 to 5 lb. pork loin
2 jars apricots (baby food)
1/3 c. honey
1/2 c. lemon juice
1/2 c. soy sauce
1 sm. onion, minced
1/2 tsp. clove garlic
1 c. gingerale
1/8 tsp. pepper
1 tbsp. coarsely grated lemon peel
1 can whole apricots

Combine baby apricots, honey, lemon juice, soy sauce, garlic clove, onion, ginger ale and pepper. Pour over meat and marinade overnight or at least 5 hours. Bake at 350 degrees for 3 1/2 hours, basting frequently with marinade. Garnish roast after slicing with whole apricots.
