BARB'S BANANA CAKE 
2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 1/2 tsp. baking powder
1 tsp. salt
1/2 cup shortening
1 cup mashed bananas
2/3 cup buttermilk or sour milk
2 eggs
1 tsp. vanilla
Creamy butter frosting or cream cheese frosting

Preheat oven to 350°F. Grease and lightly flour two 9-inch round or a 9x13-inch baking pan.

In a mixing bowl combine the first 5 ingredients. Add shortening and bananas; beat on low speed of electric mixer until well combined. Add buttermilk/sour milk, eggs and vanilla; beat two minutes on medium speed. Turn batter into prepared pans.

Bake at 350°F for 30 minutes or until done. Cool 10 minutes on wire racks.

Remove from round pans - 9x13-inch leave in. Frost with your-choice frosting.

Makes 12 servings.
