CRANBERRY - ORANGE BREAD 
1 3/4 c. whole wheat flour
1/4 c. wheat germ
2 tbsp. soy flour
3/4 c. brown sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
2 tbsp. melted butter, cooled slightly
Grated rind & juice of 1 orange plus water or more orange juice to make 3/4 c.
1 egg, beaten
1 c. raw cranberries, cut in halves

Preheat oven to 350 degrees. In large bowl, blend dry ingredients. Mix in butter, orange mixture and egg. Fold in cranberries. Pour into well-greased 9 x 5 x 3 inch loaf pan. Bake 45 to 60 minutes or until top springs back when touched lightly and bread pulls away slightly from sides of pan. Cool about 10 minutes before removing from pan. Cool on wire rack. (Bread is better the second day.) Makes 1 loaf. Makes a great gift for Christmas.
