BANANA TEA BREAD | |
1/2 c. butter 1 c. sugar 1 tsp. vanilla 2 eggs 1 1/2 c. all purpose flour 1 tsp. baking soda 1/2 tsp. salt 1/4 c. buttermilk 1/2 c. chopped nuts 1 c. very ripe bananas, mashed Cream, butter, sugar and vanilla together until light and fluffy. Add eggs one at a time beating after each addition. Beat again until well blended and fluffy. Sift together flour, baking soda and salt. Add to creamed mixture alternating with buttermilk. Stir gently only until moist. Fold in banana and nuts. Transfer to greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan. Bake 1 hour at 350°F or until done. Turn out onto wire rack to cool. Makes 1 large loaf. |
