CREAM PUFFS | |
1 c. flour 1/8 tsp. salt 1 tbsp. sugar, if puffs will have a sweet filling 1 c. water or milk 1/3 c. butter 4 to 5 eggs, at room temp. FILLING: 1 c. whipping cream 1 to 3 tbsp. powdered sugar 3/4 c. drained, crushed pineapple Bring water or milk to a boil, add flour, salt and sugar at one time to boiling liquid, stirring constantly until mixture becomes smooth. Continue stirring until mixture becomes dry, and does not cling to spoon. Remove from heat and let cool for 2 minutes. Add eggs one at a time, beating after each addition until mixture no longer looks slippery. Drop by spoonfuls or pipe through pastry tube onto a greased baking sheet. Bake in a preheated oven at 400 degrees for 10 minutes, then reduce heat to 350 degrees and bake for 25 minutes or until firm to touch. Cool completely, then slice horizontally, and remove any damp dough inside prior to filling. Fill with whipped cream sweetened, with powdered sugar and mixed with pineapple, or other filling, as desired. |
