1 (6 oz.) pkg. lemon Jello
2 c. boiling water
1 (6 oz.) can frozen apple juice concentrate
1 c. cold water
1/4 c. salad dressing like Miracle Whip
1 lg. apple, chopped (1 1/2 cups)
1 (8 oz.) plain yogurt
Lettuce

Dissolve gelatin in boiling water. Add frozen apple juice concentrate, stir until melted. Add the cold water, yogurt, and 1/4 cup salad dressing. Beat smooth with beater. Chill until mixture is partially set. Fold in chopped apple. Turn into a 6 cup mold. Chill several hours or overnight until firm. Unmold. Lettuce line a platter. Garnish with slices of apple, red showing. Serves 8 to 10.
