BETTY'S CHEESE WAFERS | |
1 lb. sharp Cheddar, grated 1 lb. butter, softened 4 c. flour (sift once) 1/4 tsp. salt, if desired 1/4 tsp. cayenne (may double or triple) Pecan halves Mix cheese with butter. Add flour, salt and cayenne. I used my dough hook or hands are fun. Make small balls the size of a grape. Place on ungreased cookie sheet. Press a half pecan in center of each ball, mashing it in well. Bake 20-25 minutes at 325 degrees. They do not brown so don't overbake or they will be bitter. Makes over 200. |
