JAM CAKE 
Jam Cake:

5 eggs, beat
1 1/2 c. sugar
1 c. shortening or butter
1 tsp. cinnamon
3 c. flour
1 tsp. nutmeg
1 tsp. cloves
1 1/2 tsp. baking soda
1 c. buttermilk
2 c. jam
1 c. strawberry jam
1 c. raisins
1 c. nuts
1 tsp. vanilla

Beat together. Then add 1 tsp. cinnamon, 3 c. flour, 1 tsp. nutmeg, 1 tsp cloves. Set aside.

Dissolve 1 1/2 tsp. baking soda in 1 c. buttermilk and add to dry ingredients. Mix well and add 2 c. jam, 1 c. strawberry jam, 1 c. raisins, 1 c. nuts, and 1 tsp vanilla. Mix well and pour into cake pans.

Bake in a 300°F oven for 1 1/2 hours or until done when tested. Let cool and frost with following icing.

Never Fail Caramel Icing:

6 tbsp. brown sugar
6 tbsp. white sugar
3 tbsp. butter
1/2 c. milk or cream
9 large marshmallows
1 1/2 tsp caramel flavoring

Bring this to a boil and boil for 2 minutes. Remove from heat and add 9 large marshmallows. Stir until they are completely melted. Add 1 1/2 tsp caramel flavoring and 1 1/2 c. powdered sugar. Beat until thick enough to spread on cake.
