SWEET POTATO CASSEROLE 
3 c. cooked sweet potatoes (2 to 3 potatoes)
1 c. sugar
2 eggs, beaten
1/2 stick melted butter
1/2 c. milk
1 tsp. vanilla
1/2 tsp. salt

Boil the whole potatoes in skins about 45 minutes; peel and mash well. Blend in remaining ingredients and pour into 1 1/2 quart baking dish. Set aside.

TOPPING:

1 c. brown sugar
1 c. pecans
1/3 c. flour
1/2 stick softened butter

Mix ingredients well and sprinkle on top of sweet potato mixture. Bake 30 minutes at 350 degrees.
