RHUBARB CAKE | |
2/3 c. sugar 1 tsp. flour 1 tsp. orange peel, grated 1 tsp. cinnamon 1 c. flour 2 tbsp. baking powder 1/2 tsp. salt 1/4 c. butter 1 egg, well beaten 3 tbsp. milk 2 tbsp. orange juice 1 tbsp. sugar 2 c. fresh rhubarb, cubed, pour hot water over it Butter 9" pan Butter 9 inch square pan. Arrange rhubarb in bottom and sprinkle with 2/3 cup sugar. Combine 1 teaspoon flour, orange peel and cinnamon together and sprinkle over rhubarb. Mix 1 egg and 3 tablespoons milk; stir into the flour mixture until moistened. Drop by tablespoons onto rhubarb and spread evenly. Bake 25 minutes at 350 degrees. Remove and pour blend of 2 tablespoons orange juice and 1 tablespoon sugar over it. Bake for 15 minutes longer or until golden brown. |
