BLACK BEANS AND RICE 
1/2 lb. black beans
3 c. water, boiling
1 1/2 c. onion, chopped
1/2 clove garlic, minced
1 1/2 tsp. olive oil plus 1/3 c. water
1 bay leaf
1 tsp. salt
3 green onions, chopped
1 1/8 c. green pepper, chopped

Cover beans with three cups of boiling water and cook 1 hour. Simmer onions, green pepper and garlic in olive oil and water until tender. Combine seasonings and beans. Cook until beans are tender and liquid is thick, about 1 hour. Serve over cooked brown rice and sprinkle green onions on top of beans. Yield: 10 servings (2/3 cup servings). 60 calories per 1/2 cup.
