FUNNEL CAKES 
1 egg, beaten
2/3 c. milk
1 1/4 c. flour
2 tbsp. sugar
1 tsp. baking powder
1/4 tsp. salt

Beat milk with egg. Blend dry ingredients together and gradually add the milk mixture, beating constantly until smooth. Holding your finger on funnel opening having a 3/8 to 1/2-inch hole, hold funnel neat fat surface, as close as possible without burning self. Remove finger and drop batter into fat, heated to 375 degrees, using a circular movement. Fry until cakes are puffy and golden brown, turning once. Sprinkle with powdered sugar. Best served warm.
