SWEET POTATO CASSEROLE 
3 medium sweet potatoes or 1 large can (3 c.)
3/4 c. melted butter
1 c. sugar
2 beaten eggs
1 small can evaporated milk
1/2 tsp. each cinnamon and nutmeg
1 tsp. vanilla

Bake the sweet potatoes and mash or use 1 large can. Mix 3 cups sweet potatoes with remaining ingredients and bake 15 minutes at 425°F.

Topping:

3/4 melted butter
1 c. crushed corn flakes
1/2 c. brown sugar
1/2 c. pecan pieces

Add topping and bake another 15 minutes at 400°F.
