IRISH SODA BREAD 
3 c. enriched flour (sifted)
2/3 c. sugar
1 tbsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 1/2 c. raisins or currants
2 lg. eggs (beaten)
2 c. fresh buttermilk
2 tbsp. shortening (melted)
1 1/2 tbsp. caraway seeds

Sift flour, sugar, baking powder, salt and baking soda. Mix with raisins or currants. Combine eggs, buttermilk and shortening. Add mixture to dry ingredients and mix until just moistened. Do not overmix! Add tablespoons of caraway seeds.
