CHEESE POTATO PUFF 
6 med. potatoes
3 tbsp. butter
1 1/4 c. grated cheddar cheese
1/2 to 3/4 c. milk
1/2 tsp. salt
1 egg, beaten

Peel potatoes. Cook in salted water until tender. Drain and mash thoroughly. Add butter, cheese, milk and salt. Beat over low heat until butter and cheese are melted. Fold in beaten egg. Spoon mixture into a greased casserole. Bake at 350 degrees for 30 to 45 minutes or until puffy and golden brown.
