OVEN FRIED CHICKEN | |
1/2 c. flour 1 tsp. salt 1/4 tsp. pepper 2 tsp. paprika 1/2 c. vegetable shortening 2-3 lb. frying chicken, cut up Mix flour, salt, pepper, paprika in a paper bag. Put shortening in an oblong pan, 13"x9"x2" and set in preheated oven at 425 degrees to melt. Shake 3 to 4 pieces of chicken at a time in the paper bag to coat thoroughly. Place chicken skin side down in a single layer in the pan of melted shortening. Bake for 30 minutes then turn so skin side is up. Return to oven and bake an additional 30 minutes. Makes 4 servings. |
