JAM CAKE 
1 c. jam or apple butter
1 c. buttermilk
2 c. sugar
2 sticks butter
3 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. vanilla
1 c. nuts
1 c. raisins
1 c. fresh coconut, grated
3 eggs

Mix dry ingredients. Cream together butter, sugar and jam. Add eggs, then add milk and dry ingredients (small amounts at a time until well mixed). Add coconut, raisins and nuts. Pour into layer pans and bake in 350 degree oven for about 40 minutes. Makes four 9 inch layers. This cake is better if baked a few days before eating.

ICING FOR JAM CAKE:

1 c. butter
1 c. cream (or canned milk)
1 1/2 c. coconut stock (milk)
2 tbsp. flour
Pinch of salt
1 c. sugar
1 tsp. vanilla

Mix all ingredients in pan. Bring to boil. Let boil rapidly for 12 minutes or until thick. Let cool and spread on cake, sprinkle with coconut and nuts.
