CROCK POT PUDDING (RICE) 
2 1/2 c. cooked rice
1 1/2 c. scalded milk
2/3 c. white or brown sugar
3 eggs, beaten
1 tsp. salt
2 tbsp. vanilla
1 tsp. cinnamon
1 tsp. nutmeg
1/2 c. raisins
3 tbsp. soft butter

Combine all ingredients. Pour into lightly greased crock pot. Cook on high 1 to 2 hours. Stir during first 30 minutes. Recipe can be doubled.

I tried this with brown rice. I have never really had rice pudding, except what I have made myself, but have decided that I am not a big fan after a handful of attempts. This recipe is OK, except that the butter is way too much for me. It is too greasy (and yes, I do use real butter). I cannot tolerate that much fat at one time, so if I make it again, I will cut it down to about 1/2 tablespoon of butter.

I have been making this recipe for many years. I use to double double the recipe when my kids were still home. Now I just stick with this amount. It is the best!
