CHICKEN CASSEROLE WITH CASHEWS 
SERVES 8 TO 10:
2 fryers chicken
1/2 c. cooking oil
2 c. water or chicken broth
1 c. onions, chopped
2 c. cashews
4 c. celery, chopped
Salt and pepper to taste
4 cans cream of mushroom soup
4 (3 oz.) cans chow mein noodles

SERVES 4 TO 6:
1 fryer chicken
1/4 c. cooking oil
1 c. water or chicken broth
1/2 c. onions, chopped
1 c. cashews
2 c. celery, chopped
Salt and pepper to taste
2 cans cream of mushroom soup
2 (3 oz.) cans chow mein noodles

Cut up chicken and fry in oil until browned and tender. When it is cool, bone and dice meat. Combine chicken with all other ingredients except noodles. Place noodles in greased casserole dish, and spread the chicken mixture over noodles. Bake in a 350 degree oven for about 20 minutes.
