6 lbs. pigs feet
6 cloves garlic
1 tsp. salt
Put pigs feet in large pot with water to cover. Soak in cold water for one hour. Then rinse and rinse. Fill pot with cold water and cook the pigs feet for 5 or 6 hours. Keep taking the scum that surfaces off. While it is cooking, add garlic and salt and pepper. Then you put temperature on low and allow to simmer. Mix every 1/2 hour so that it doesn't stick to pan. Remove bones and fill bowls with mixture and top with fresh garlic. Let cool in refrigerator. Yields 7 servings.
