COFFEE CRUMB CAKES | |
2 c. flour 3 tsp. baking powder 3/4 tsp. salt 1/4 tsp. cinnamon 1/4 tsp. baking soda 1/4 tsp. nutmeg 1/2 c. butter 1 c. milk 1/4 tsp. coffee, instant 1 egg 1/2 c. sugar Sift together flour, baking powder, salt, cinnamon, soda and nutmeg. Cut in butter until pea size. Reserve 1/4 cup for topping. Combine milk, coffee, egg and sugar. Add all at once to the remaining crumb mixture. Stir with a spoon. Fill paper lined muffin cups 1/2 full. Sprinkle with the reserved crumbs. Bake at 375 degrees for 20-25 minutes. |
