PINEAPPLE ZUCCHINI BREAD | |
3 c. sugar 1 c. oil 3 eggs 2 tsp. vanilla 1 tsp. salt 1 tsp. baking soda 1 1/2 tsp. baking powder 1 tsp. cinnamon 3 c. flour 1 c. crushed pineapple, drained 1/2 c. raisins 2 c. zucchini, grated 1 c. nuts, chopped Squeeze the pineapple to make sure it's completely drained. Mix all ingredients together in a large bowl. Place in well-greased loaf pans. Bake at 350 degrees for 1 hour. Test for doneness with toothpick. Turn out of loaf pans immediately. Dust with powdered sugar. Makes 2 large loaves. |
