BLACKEYED PEA CASSEROLE 
1 c. ham, sm. cubes
1/4 lb. sausage
1/4c. onion
1/4 c. green onions
1/4 c. bell pepper
1 clove garlic
2 cans black eyed peas with jalapeno
2 c. cooked rice
1/2 c. bread
1 stick butter

Fry sausage and onion, bell pepper and garlic on low heat 25 minutes. Add ham, green onion, cook another 10 minutes. Add undrained peas, salt and pepper. Mix pea mixture with rice. Put in 2 quart dish, cover with bread crumbs, dot with butter. Bake at 350 degrees for 20 minutes.
