CUCUMBER MOUSSE 
2 medium cucumbers
1/2 c. sour cream
2 tsp. vinegar
1 tsp. salt
1 tbsp. chopped onion
1/8 tsp. coarse black pepper
1 pkg. lime gelatin
1 c. boiling water
3/4 c. cold water

Peel and coarsely grate cucumbers. Wrap in a paper towel and squeeze gently to completely remove juice. Dissolve gelatin and salt in boiling water. Add cold water and vinegar. Fold in sour cream and chill mixture until thickened. Fold in cucumbers, onion and pepper. Pour into greased mold and chill until firm.

Serves 6.
