GUEST SUPPER MUFFINS 
2 c. flour
2 1/2 tsp. baking powder
2 tbsp. sugar
3/4 tsp. salt
1/2 c. shortening
1 egg, well beaten
3/4 c. milk

Sift together flour, baking powder, sugar and salt into bowl. Cut in shortening until crumbs are the size of small peas. Make a hollow in center.

Combine egg and milk; add all at once to hollow in dry ingredients. Stir only until dry ingredients are just moist (batter will be lumpy). Fill greased muffin pan cups 2/3 full.

Bake in hot oven (400 degrees) for 25 minutes or until done. Makes about 12 muffins. If desired, quickly fold 1 cup blueberries into batter.
