SQUASH CASSEROLE 
Use 2-quart casserole dish.

6 c. zucchini or yellow squash
1 c. sour cream
1 med. onion
1 c. carrots
1 can cream of chicken soup
1 (8 oz.) box Stove Top stuffing
1/2 c. butter, melted

Boil squash and onion together for 5 minutes; drain. Mix stuffing, bread and seasoning packet, dry. Add melted butter to stuffing. Put half of stuffing mixture in bottom of dish. Mix sour cream and soup together; add carrots and squash. Pour over stuffing, then put remaining stuffing mix on top. Bake for 30 minutes at 350 degrees.
