CARROT RING 
1/2 c. butter
1 c. brown sugar
3 eggs
1 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
2 c. grated carrots
Grated rind of 1/2 lemon
3 tbsp. lemon juice
2 c. steamed fresh peas

Preheat oven to 350 degrees.

Cream together butter and sugar. Beat in eggs. Stir in flour, baking soda and baking powder. Add carrots, lemon rind and lemon juice. Mix well. Pour into a well greased 1 quart ring/mold pan. Bake for 45 minutes. To serve, fill center of ring with peas. Serves 6-8.
