BEEF CASSEROLE 
1 lb. beef
1 c. sour cream
2/3 c. mayonnaise
1 c. Cheddar cheese, shredded
1/4 c. jalapeno cheese spread
1 small onion, chopped
3 fresh tomatoes, chopped
1 green pepper, chopped
2 c. Bisquick baking mix
1/2 c. cold water

Heat oven to 375°F. Grease 9 x 13 baking dish. Cook beef until red is gone; drain. Salt and pepper to taste.

Mix the two cheeses, sour cream, mayonnaise and onion; set aside. Mix water and Bisquick and pat dough in pan 1/2-inch up the sides. Layer beef, tomatoes and green peppers. Spoon on sour cream, cheeses and onions. Spread over top and bake 25 to 30 minutes.
