BANANA NUT BREAD 
1 c. sugar
1 1/2 c. flour
1 tsp. salt
1 c. very ripe mashed bananas
1 tsp. vanilla extract
1/2 c. butter (at room temperature)
2 eggs
1 tsp. baking soda
1/2 c. sour cream
1/2 c. chopped walnuts

Preheat oven to 350 degrees. Cream the butter, sugar and eggs. Sift the dry ingredients and combine with the butter mixture. Blend well. Add the bananas, sour cream, and vanilla. Stir well and add the walnuts. Bake 1 hour, cool to room temperature before slicing. Yields 1 (9 inch) loaf.
