HONEY CAKE 
NOTE: This cake keeps very well (at least one week). Can be made well in advance of a party.

2 c. white flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
3 tbsp. butter
1/2 c. granulated sugar
3/4 c. honey
3 eggs, well beaten
Grated rind, 1 orange
1/2 c. applesauce
1 c. chopped walnuts

Heat oven to 325 degrees. Grease a 15 x 10 x 1 inch jelly roll pan or a shallow roasting pan. Mix together flour, baking powder, baking soda, and salt, set aside. With spoon mix together butter, sugar, and honey until creamy.

Stir well beaten eggs into butter mixture, stir until smooth. Stir in flour mixture, orange rind, applesauce and walnuts to above mixture. Stir only just until mixed. Turn batter into prepared pan. Bake 40 to 45 minutes or until a cake tester comes out clean. Cool on wire rack for 10 minutes; carefully remove from pan, then completely cool on rack. Cut into squares when ready to serve.
