MARINATED MUSHROOMS AND GREEN
BEANS
 
3/4 c. red wine vinegar
1/2 c. water
6 tsp. sugar OR
Equivalent amount artificial sweetener
1 tsp. salt
1/2 tsp. oregano
1 bay leaf
1 garlic clove, split
5 peppercorns
2 cloves
4 c. fresh mushrooms, quartered
4 c. fresh green beans, trimmed and cleaned

In medium saucepan combine all ingredients except mushrooms and green beans. Bring to a boil. Add mushrooms. Reduce heat; cover and simmer 5 minutes.

Using slotted spoon, remove mushrooms and transfer to serving dish. Add green beans to simmering mixture. Cover and simmer about 15 minutes or until tender.

Using slotted spoon, remove green beans and add to mushrooms in serving dish. Pour liquid over vegetables. Chill overnight. Makes 6 servings.

Variations:

Add pimentos or red bell peppers for color.
