LAYERED ENCHILADAS 
1 lb. ground beef
1/2 lb. cheese, grated
1 onion, chopped (more or less, to your taste)
8-12 tortillas
1 can enchilada sauce
1 can or less refried beans
1/2 can small pitted olives

When all ingredients are ready, layer them in pan, dipping tortillas into sauce before putting them in. Cut tortillas to fill corners. Save enough cheese for the top, and garnish with a few of the olives. Bake 30 minutes at 350 degrees. Less baking is needed if you heat the beans and sauce before assembling into layers.

For 4 people, use a 9 inch square pan. Heat oven to 350 degrees.
