IRISH POTATO CASSEROLE 
2 lbs. frozen hash brown potatoes, diced (Ore-Ida brand)
2 c. sour cream (1 pt.)
2 c. sharp, grated Cheddar cheese
1 can cream of chicken soup
1/2 c. diced onion
1 tsp. salt
1/2 tsp. pepper
2 sticks butter
2 c. crushed corn flakes

Melt 1 stick butter and mix with potatoes; add sour cream, soup, cheese, onion and seasonings, mix well. Pour into large greased casserole (or spray with Pam or Mazola spray). Mix 2 cups crushed corn flakes with 1 stick melted butter and put on top of potato mixture.

Bake at 350 degrees for 1 hour. (Cover with aluminum foil for approximately first 25 minutes to keep topping from getting too brown). This warms up real well in microwave or conventional oven.

Since microwave ovens vary in power, you may need to adjust your cooking time.
