IRISH POTATO CASSEROLE | |
2 lbs. frozen hash brown potatoes, diced (Ore-Ida brand) 2 c. sour cream (1 pt.) 2 c. sharp, grated Cheddar cheese 1 can cream of chicken soup 1/2 c. diced onion 1 tsp. salt 1/2 tsp. pepper 2 sticks butter 2 c. crushed corn flakes Melt 1 stick butter and mix with potatoes; add sour cream, soup, cheese, onion and seasonings, mix well. Pour into large greased casserole (or spray with Pam or Mazola spray). Mix 2 cups crushed corn flakes with 1 stick melted butter and put on top of potato mixture. Bake at 350 degrees for 1 hour. (Cover with aluminum foil for approximately first 25 minutes to keep topping from getting too brown). This warms up real well in microwave or conventional oven. |
