EGG ROLLS 
2 to 2 1/2 lb. hamburger
2 c. uncooked rice
1 medium cabbage, diced
4 carrots, shredded
1 1/2 c. sharp Cheddar cheese, shredded
2 pkg. egg roll wrappers
5 beaten eggs

Optional:

1 large onion, diced
1 large bell pepper, diced

Fry hamburger and drain. Cook rice according to directions. Fry cabbage and carrots in 1/2 stick butter until tender. (If adding optional ingredients, cook them with cabbage.) Crumble hamburger. Add rice, vegetables and cheese. Salt and pepper to taste. Mix. Place 1 heaping tablespoonful in each wrapper (may add a little more). Roll wrapper according to package. Roll wrappers in beaten eggs. Fry in oil about 1-inch deep until golden brown; turn. Fry other side. Drain. Serve plain or with sweet and sour sauce.
