CHICKEN CORDON BLEU | |
1 skinless, boneless chicken breast 2 thin slices lean, cooked ham 2 thin sliced Swiss style diet cheese Grated nutmeg Salt and pepper to taste 2 tbsp. white wine or lemon juice 1 tbsp. Parmesan cheese 2 tbsp. Italian bread crumbs Slice chicken breast in half. Dice or slice ham and cheese. Divide equally on 2 chicken pieces. Sprinkle with nutmeg, salt and pepper to taste. Roll up each cutlet with filling inside. Dip each roll first in little wine or lemon juice, then in Parmesan then bread crumbs. Arrange seam side down on baking tray which has been sprayed with Pam. Bake uncovered in preheated 425 degree oven for 20-25 minutes or until cheese begins to melt. Makes 2 servings. |
