CHILI CON QUESO 
4 tbsp. butter
4 tbsp. flour
1 med. onion, chopped
1 med. green pepper, chopped
1 tsp. chili powder
1 can Ro-Tel hot tomatoes, undrained
2 lbs. Velveeta cheese

Place butter and flour in casserole dish (approximately 3 to 4 quart size). Microwave on high or full power for 2 minutes. Stir, add onion and green pepper. Cover and cook on full power for 3 minutes. Add chili powder and Ro-Tel tomatoes which have been blended in food processor or blender. Cover and cook on full power for 5 minutes, stirring after 2 minutes. Add cheese which has been cut in cubes. Reduce power to medium high or 80 percent. Microwave for 4 to 6 minutes or until cheese is melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
