APPLE CAKE 
1/2 c. butter
1 c. sugar
3 eggs, separated
1 1/2 c. flour
3/4 tsp. baking soda
1/2 c. chopped nuts (walnuts)
1/2 tsp. cinnamon
1/4 tsp. nutmeg spice
3 c. apples (green cooking are the best)
1/2 c. coconut
1 c. brown sugar

Cream butter and sugar; beat egg yolks slightly and add to mixture. Sift flour, baking soda, cinnamon, nutmeg; add to mixture (batter will be stiff). Add sliced apples.

Press this into a 13x9 inch pan (greased). Then beat egg whites until stiff. Fold in brown sugar, nuts and coconut and spread on top. Bake at 350 degrees for 40 minutes. This also freezes very well.
