COOKED RAISIN SPICE CAKE | |
1 1/2 c. raisins cooked in enough water to have 1 c. juice 1/2 c. shortening 1 1/2 c. sugar 2 eggs 1 1/2 tsp. baking soda 1/2 tsp. ginger 1/2 tsp. nutmeg 1/2 tsp. allspice 1/2 tsp. cinnamon 1/2 tsp. cloves 1/4 tsp. salt 1 tsp. vanilla 3 c. flour Cook raisins in water until boiling. Drain juice retaining 1 cup. Cream shortening, and sugar. Add eggs and mix. Add remaining ingredients. Bake in greased and floured 9 x 13 inch pan at 350 degrees for 35 to 45 minutes. Best if frosting with a stiff powdered sugar frosting as soon as taken out of the oven. |
