ZUCCHINI RICE BAKE (Dairy or
Pareve)
 
1 c. cooked rice
3-4 lbs. zucchini, cooked, mashed and drained
2 c. Cheddar cheese (dairy) OR 1 (14 1/2 oz.) can stewed tomatoes (parve)
1/2 c. chopped green onions
1/4 c. chopped parsley
3 eggs, beaten
1/2 c. (1 stick) butter, melted
Salt and pepper to taste
Paprika for garnish

Combine all of the above except paprika and pour into greased 9x13 inch glass dish. Sprinkle paprika on top. Bake at 350 degrees for 1 hour or until firm.
