EMMA'S ONE POT CHICKEN AND RICE 
1 whole chicken, cut up or 8 chicken parts
1 (15 oz.) can diced tomatoes
1 med. zucchini, sliced
1 onion, sliced
2-3 carrots, sliced
2 tbsp. vegetable oil
1 clove garlic, chopped
1-2 tsp. Italian seasoning or curry powder or Spanish seasoning
1 c. uncooked rice
2 c. water or chicken broth
Salt and pepper to taste

In a large pot, heat the oil and brown the chicken lightly. Remove from pan. Brown the onions. Add the chicken and all other ingredients. Bring to a boil. Turn down heat and cover to simmer slowly for 45 minutes or until liquid is absorbed and chicken is tender. Delicious! Serves 6-8.
