LEMON PIE 
1 1/2 c. sugar
1/4 c. plus 2 tbsp. cornstarch
1/2 c. lemon juice
1/2 c. cold water
3 egg yolks, well beaten
2 tbsp. butter

Mix ingredients above and add to 1 1/3 cup boiling water. Cook until thick, 2 or 3 minutes, stirring constantly. Pour into a baked 9-inch pie shell. Top with meringue.

MERINGUE:

3 egg whites, well beaten
1/4 tsp. tartar
5 tbsp. sugar, slowly added

Beat until stiff. Bake until brown.
