BANANA DROP COOKIES 
2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. cinnamon
2 1/4 c. flour, unsifted
2/3 c. butter
1 c. sugar
2 eggs
1 c. mashed ripe bananas (3 or 4)
1 tsp. vanilla

Stir baking powder, baking soda and cinnamon into flour; set aside. Cream shortening and sugar; add eggs, 1 at a time and beat well. Add bananas, then vanilla; mix well. Stir in flour mixture. Drop by rounded teaspoonful onto cookie sheet, about 1 1/2" apart. Bake in preheated 400 degree oven for 10 to 15 minutes until edges are lightly browned. Remove baked cookies from pan immediately. Makes about 50 (2") cookies.

NOTE: You may fold 6 ounces semi-sweet chocolate chips into batter before baking or for banana nut, fold in 1 cup chopped walnuts before baking for variations.
