2 c. flour 3 tbsp. sugar 2 tsp. baking powder 1 tsp. salt 1/4 c. butter 2 beaten eggs 1/2 c. cream 1/4 c. currants or chopped raisins (opt.) Heat oven to 375 degrees. Mix together flour, sugar, baking powder and salt. Cut in butter until mixture is crumbly. Add currants if desired. Combine eggs and cream. Add to crumb mixture. After mixing turn onto floured counter. Knead lightly 5 or 6 times. Divide in half. Roll each half to make a circle 1 inch thick. Cut each circle in 4 wedges. Arrange on baking sheet. Brush tops with egg white and a sugar/cinnamon mixture if desired. Bake 15 minutes. |
