ORANGE - GINGER CHICKEN 
4-6 pieces of chicken
Small red potatoes, approx. 1 per person
2 lg. onions, quartered
4-5 carrots, peeled & cut into 2" pieces
Pea pods

SAUCE:

2/3 c. orange juice
1/3 c. soy sauce
2 finely chopped cloves garlic
1/2 tsp. ground ginger or a few slices of fresh ginger

Preheat oven to 350 degrees. Place chicken in the bottom of a large heavy casserole that has a lid. Next layer the onions and the carrots. Lastly put the whole washed and scrubbed potatoes. Mix the orange juice, soy sauce, garlic and ginger together and pour over contents of the casserole. Cover and bake for 1 1/4 hours.

For the last 5 minutes, put the pea pods on top of the potatoes. Recover and finish cooking. You have a whole meal in one pot. Enjoy.
