MICROWAVE HOLLANDAISE | |
1/3 c. butter 1/4 c. milk 1 to 2 tbsp. lemon juice 2 egg yolks 1/4 tsp. salt 1/4 tsp. dry mustard Dash of Tabasco sauce Place butter in 1 quart casserole. Place on oven floor. Cook on high 45 to 60 seconds until melted. Stir in milk, lemon juice, egg yolks, salt, dry mustard, and Tabasco sauce. Taste for flavor. Beat with spoon or wire whip until well blended. Cook 1 1/2 to 2 minutes or until thickened. Stir halfway through cooking time. (If you have Cookmatic Level, do this at 8 or 3/4 otherwise just watch carefully for curdling!) |
